The right cake pan determines whether your cake rises evenly, releases cleanly, and bakes in the time the recipe expects. Most standard US pans are 2 inches deep, but shape and material matter just as much. Here is how the common types work and when to reach for each one.
Round Cake Pans
Round pans are the standard choice for layer cakes. Common diameters are 8, 9, and 10 inches, with 9 inches being the most versatile. Because round pans have no corners, heat distributes evenly around the batter, producing uniform layers that stack neatly. A recipe tested for a 9-inch round fills 8- and 10-inch rounds to different depths, so stick with the size the recipe names unless you adjust batter volume. Square and Rectangular Pans
Square pans at 8×8 and 9×9 inches are common for brownies, bars, and single-layer cakes. The 9×13-inch rectangular pan is the workhorse of sheet cakes and is often called a quarter sheet pan. Because corners brown faster than the center, square and rectangular pans need careful checking. Loaf, Springform, and Bundt Pans

If you must substitute, keep these rules in mind: do not fill any pan more than two-thirds full to leave room for rising; check the internal temperature or toothpick test early because material changes bake time; and never use a 1-inch-deep pan for a recipe that expects 2-inch depth. Measure pan dimensions from inner edge to inner edge, and remember that Bundt and tube pans, while related, differ in release and shape. A springform pan’s removable seam creates a risk of leakage with thin batters, so it belongs with cheesecakes and similar thick mixtures, not with thin cake batter.
